Little Fighter 2!
Seriously though, my first favorites were Street Fighter 2 and Killer Instinct. Lately I've been playing Soul Calibur 2 and Virtua Fighter 4 Evo. All great games, VF4 has so much depth and SC2 has some very cool characters and moves.
