Stuffed Boigas
variations are endless - here's the basics but use your imagination - it's endless
the filling
1 tbsp butter
1 c chopped mushrooms
1/4 c finely chopped onion
1 1/2 tsp chipotle sauce
1/4 c shredded swiss cheese
da boigas
1 lb ground
1 tbsp worcestershire
1 1/2 tsp chipotle sauce
salt and ground pepper to yer liking
heat the butter in a skillet over medium and saute the mushrooms and onions till tender - remove from the heat and stir in the chipotle sauce and swiss
combine the beef, worcester..., chipotle and any salt / pepper ya want in a bowl
make 8 patties but don't pack them too tight and no more than 1/2" thick - okay???
on 1 patty spread a little filling but try to leave about 1/2" open around the edge - place another patty on top and press the edges together making 1 stuffed boiga - we're making 4 so do it again till yer done
grill - broil or, heaven forbid, pan fry about 10 - 15 minutes per side
line up your buns with sliced tomatoes, red onions, sliced avocado, or whatever else you have lying around - beer on ice and yer good to go
we've stuffed them with guacamole, added salsa, tried blue cheese instead of swiss, different sauces (go easy on the sauce - you'll make mud if you don't), whatever ya want - they do come out good
