If she's taking the pills as intended, then she has a week off for her period. Actually, she could continue to take the week's worth of placebo pills, but I've never known anyone who actually DOES that.
That doesn't mean she's "off birth control" for that week. It's a cyclical thing. As long as she starts on time at the end of the week, then the pills will work as designed--they'll prevent her next ovulation in a couple weeks and you'll be fine.
I like your caution, though. It's true that pre-cum can cause pregnancy in the event of a birth-control breakdown.
