For the optimum quality, use component video and digital audio. The component cable connection will give you the highest available lines of data (of what you listed - slightly better than S-video) and the digital audio will allow your receiver to decode distinct surround sound (if available). The L/R connections will only get you pro-logic surround (mono rear) max.
Depending on how old your amp/receiver is, you may want to consider hooking the video directly to the HDTV. (And hopefully it's a progressive scan DVD player.)
