I've started just using 1 whole egg per every 3-4 eggs that I cook. The others, Iwill just use the egg white. Egg whites have tons of protein as well and have VERY little of the cholesterol found in the egg yolk. Most of the cholesterol of an egg is contained in just the egg yolk.
