Food What's For Dinner Tonight?

    Last night was leftover manicotti with a salad.

    Tonights dinner has yet to be determined, we'll decide when we go for our weekly shopping trip.

    Been a while since I contributed.

    In honor of the decent weather I grilled ribeyes and some pretty non-shrimp sized shrimp.

    Last nights dinner was a typical weeknight yawner--Broiled pork chops, steamed carrots, & leftover garlic mashed potatoes.

    I thoroughly "stabbed" the chops and brushed them generously with Ken's Steak House Lite Raspberry Walnut Vinaigrette. We bought the dressing only to find out we don't like it on salads. It should make a good marinade.

    I'm thinking curry rice in the slow cooker largely because I'm exhausted and don't want to cook.

    I just threw down some spiral-sliced zucchini noodles with some of my awesome red sauce with tons of meat in it.
    It was the fastest thing I could get in my belly before I ate the cat.
    Two crowns of broccoli and a small spinach salad was not enough lunch.

    We haven't yet tried the Ken's Steak House Lite Raspberry Walnut Vinaigrette
    as a proper let-it-thoroughly-soak-in marinade. It was good as quick marinade.

    Last night's dinner was pretty basic. I broiled 90/10 ground beef patties with no seasoning, topped them crumbled blue cheese at the end. Broccili steamed in the MW, corn boiled on the stove. Dessert was Blue Bell coffee ice cream with Ghirardelli 60% cacao chocolate chips.

    My MIL cooked typical British meals.
    Most were quick meals.
    Some, usually on Sundays, were 'proper' meals.
    Nearly all were pretty bad.

    My MIL always forgets something essential when she cooks. She gets distracted in the middle of the process and forgets to add something. She's overly reliant on recipes instead of learning how to use method, which inherently lends itself to making mistakes for someone like her. She's always astounded when I say I didn't use a recipe, I just cooked. She's FINALLY come to understand that buying pie, rolls, or cake bugs me. Now, if only I can get the rest of the family on board (Grandma's b-day cake was from the grocery store bakery :().

    I've been missing curry since I moved to the Bayou. Not a single thai or Indian restaurant around, so I had to make it myself.

    I adapted the recipe from here: Thai Curry Chicken | Award-Winning Paleo Recipes | Nom Nom Paleo

    Instead of frozen veg, I used fresh carrot, broccoli, yellow pepper, mushrooms, leeks, and orange cauliflower. I also added 8 shrimp when I started the simmer of the veg and chicken with the coconut milk (of which I used the whole 13.5oz can, because I used too much veg, ha ha)
    I used 5T of red curry paste, added some red pepper flakes and sriracha when I realized this was not going to be very hot. It turned out great, but needed more salt, which I should have noticed if I was tasting all along.

    Yum!

    I baked a chicken breast in the oven (22 minutes, coated with olive oil and toped with italian seasoning, salt, pepper, and garlic powder) and simmered a can of crushed organic tomatoes with a bunch of herbs, onion, olive and artichoke quarters while the chicken cooked. Easy peasy.
