Food Potluck Wedding

    I've been invited to a small (30-40 people) wedding on Sunday and its a potluck reception. I am drawing a total blank on what to make for this thing. Its going to be out in a field behind the bride's parents house, so I seriously doubt anything in a crock pot will work as there will be no electricity. I don't want to take anything sweet since there will be wedding cake. I'd really like to make something besides my old "go to"...sausage balls, but I can't come up with anything. Suggestions would be awesome (We don't have to travel far, its only about 45 minutes from our house) The wedding isn't until 4 pm so I have time to prepare whatever I come up with the same day.

    Help!!

    I'm thinking picnic-style foods that don't need refrigeration, either. Things that are brined will keep out quite well. What about an antipasto platter? You could put almost anything on it--tomatoes, artichoke hearts, olives, sliced meats, cheeses, small toasts. There are lots of different platters you could do that are fairly easy to throw together. The other alternative is a mayo or vinegar-based salad. Whatever you make, just be sure that if it needs to be cold, it stays cold until serving. Ideally, it would stay cold after serving, but that's always difficult.

    Veggie and cheese tray
    Meat, cheese, and cracker tray

    I have a feeling the meat/cheese/veggie tray thing will be over done, thats usually the go to around here when people really want to be bothered with actually making anything and they are cheap enough to pick up at the grocery store. I was trying to come up with something that the masses wouldnt do lol This is the south, I can guarantee there will be more deviled eggs than you can shake a stick at

    The sandwich thing sounds doable

    I'd stay away from mayo- or egg-based stuff, but then, I'm kinda paranoid about stuff like that.

    I was thinking maybe something like a quinoa salad, but I know from experience that doesn't always go over well in the South :) Maybe some homemade salsa with multi-colored chips.

    Or corn cake...damn, I want corn cake now.

    No. Corn cake is sweeter, and has pieces of corn in it.


    ....except I just remembered "nothing sweet" was a rule, so scratch that.

    No, she means corn cake.
    What about a rice salad? I've seen cold rice and blackeyed peas salad with diced tomatoes and onion. I like wild rice salad with rainbow vegetables (tomato, carrot, yellow pepper, scallions, feta, edamame, anything that sounds good) with a vinaigrette over it. Pretty easy.

    I am not familiar with corn cake either. Rice salad sounds interesting, I'm not familiar with that either. One of these days I'm going to have to learn about quinoa...

    Mayonnaise actually protects against food poisoning because it's acidic.

    Quinoa is awesome. I love it in fresh salads.

    This is one of my favorites for summertime. It's hearty enough that it makes a nice light meal on a summer day.

    Well, it's definitely a grain worth checking out. It's higher in protein than others. I love the texture and nutty flavor. I make mine in the rice cooker, but it's easy enough to do on the stovetop and it's superfast.
