Recipe I never liked that, until I tried it THIS way...

    Have you ever not been a fan of a particular food, until you tried it prepared differently than you were accustomed to, and it completely changed your opinion of it?

    I have never been a fan of turkey. I'm a fan of dark meat, but always found turkey to be too dry in comparison to other birds. Come Thanksgiving, you would find a bunch of ham on my plate, some stuffing, and some glazed carrots, but no bird.

    Today however, I had the pleasure of going to the Charlotte Renaissance Festival. Before leaving the house, I had it in my mind that I would have some enormous hunk of greasy deliciousness in my hand before I walked away from the fairgrounds. Unfortunately for me, or so I thought, it happened to be a gigantic smoked turkey leg.

    Let me tell you - one bite into the smoky, glistening, dripping hunk of turkey meat and I fell in love. All of those Thanksgiving pieces of turkey, the turkey breast on sandwiches, the school cafeteria turkey, the diner turkey that I had been coaxed into gagging down at some point in my life - none of that mattered anymore. The smoked turkey leg had entered my life, and was there to stay.

    Odd I was just thinking of this topic but not exactly in this frame, more like what did you used to not like and now you like.

    Pate. I had someone make me some awesome pate that I swear to god it isn't liver but some other awesome spread to put on anything bread or cracker.
     
  3. Those things are awesome! Outside a deep-fried bird I had one Thanksgiving, I've felt the same as you about turkey. But the Ren Fest smoked legs are something special.

    Turkey doesn't have to be dry. It just has to be cooked right. So many people over cook their turkey. Cook to temperature and you will never go wrong.

    As a kid, I never ate vegetables. All I would eat was peas, corn, and potatoes. That was it. In first year University, I was invited over to have dinner with this very beautiful woman. I ate every vegetable she put on my plate and that was the start, not of a long relationship (it burned hot and was over quickly), but of a love affair with food.

    The most recent addition was Brussels sprouts. I never liked them. Too many bad memories of being forced to eat them as a kid. I learned a way to make them where you blanch them in salted water, cut them in half and then pan fry them until they are browned (preferably using bacon and it's fat for the oil). Unbelievably good.

    Hmmm,
    I have not had the "pleasure" of a turkey leg..but, it seems there is a big demand for them..just walk around at Disney, lots of
    people walking around munching on these...then again, not a pleasant sight...to say nothing about the obesity on display....(at Disney)

    Turkey is difficult to cook well for many people. I think it's because they only cook it once a year and get so focused on the sides that they forget that the bird is the centerpiece of the meal. For one, the USDA's recommended temperature for turkey used to be much higher, and many people still stick to that, even though it's wrong. For two, the legs and breast cook at different speeds. There are some tricks you can employ to control that, though. Additionally, butter is your friend. Stuff the skin with butter and herbs, and baste the turkey with melted butter and herbs. It results in a deliciously herby, crispy skin. I love turkey. When I cook it, I use the method mentioned above. When my in-laws cook it, it is usually smoked.

    I can't really think of anything. I like most foods, and I always have. I'll have to think on this.

    Along the lines of what Cyn mentioned above, liver is hit or miss for me. Liver in a cold or pate form I can barely stomach (at least none of the store-bought varieties I've ever tried). However, if you saute it with onions and serve it on good bread with a bit of spicy mustard, I can't get enough of the stuff.

    Liver and onions with BACON delish...have you ever had really good pate, duck liver of goose...YUM
    However Liver in any form..probably not really good for you...and the bacon...oh boy
    Then again Jewish people eat griveness, fried chicken skin...and schmaltz (rendered chicken fat) on bread...
    heart attack in the making ...but soooo good
    You know..."they" say if its really good...spit it out its bad for you
