Recipe I didn't know cranberry sauce was this easy...

    Is this a big secret no one told me until this year? I thought there was some arcane method to getting the taste of cranberries in a can, now I find that cranberries in a can is ass-tastic compared to the 4 ingredients you need, and its almost cheaper to make it the good way.

    2 bags of cranberries (I used Ocean Spray because the organics were 5 times more expensive.)
    2 cups OJ
    2 cups of sugar (I used Stevia cup for cup on this, staying light on sugar.)
    2 tablespoons of Pumpkin Pie Spice (I make mine myself with an extra heavy dose of ginger.)

    Just mix everything but the cranberries in a pot and bring it to a boil. Add the cranberries and reduce the heat. Simmer for 10 minutes when all the cranberries should be popped and turn it off. Let it cool and then toss them in the fridge. The natural pectin makes it gel up and the orange and spices make it better than anything else you have ever had.

    I usually use fresh-squeezed OJ, zest the orange, and omit the spices you included, but yeah, it really is that easy, and my cranberry sauce gets rave reviews. This year I'm going to make a batch to can while fresh cranberries are in stores.

    Sounds decent except for the Cranberries; they rank high on my list of least favourite foods.
    As odd as it sounds I actually want to try making this though just to try the fresh-made variety.

    We bring the fresh made cranberries every Thanksgiving and people can't get over how good they are and how much work we must have put in to make them!

    I make a small fresh batch every year. This year I am trying to make a relish rather than a sauce.

    I use fresh cranberries and frozen OJ concentrate. I don't add any spices, or more sugar. It's supposed to be tart, and cranberries have for years been bred to be sweeter. And I don't cook it at all, just run it in the blender.

    That would be a big reason why I detest cranberries so much, and likely true for lemonade as well. I am fine with the lemon-lime flavour in 7-up and squirt but mountain dew is horrible and the only use I have for fresh lemons or lemon juice is sprinkling on freshly cooked fish.

    I actually never cared much for cranberry sauce, until I tasted fresh cranberry relish. After a few experiments, I settled on this recipe:

    1 12 oz pkg fresh organic cranberries
    1 1/2 pint pkg fresh organic raspberries
    1 seedless organic navel orange, peeled
    zest of 1 organic lime
    3/4 - 1 1/2 cup confectioner's sugar, depending on how tart you like your relish
    1/2 tsp freshly grated organic ginger
    3-4 star anise
    1/4 tsp Vietnamese cinnamon
    1/4 tsp allspice
    1/4 tsp cardamom
    1/4 tsp sumac

    Pulse cranberries, raspberries, orange, and lime zest in food processor, occasionally scraping down sides, until mixture is fine. Pour mixture into mixing bowl, and add sugar, ginger, and other spices, mixing well. Cover bowl and place into refrigerator to marinate for at least 2 hours, and up to 24 hours. Serve chilled.

    Oooh, that sounds good.

    I've yet to have time to try canning cranberry sauce. I'm hoping once school is wrapped up for the term I'll be able to try.
