Recipe Funky Dishes/Recipes

    I've very recently started doing proper cooking rather than relying on delivered restaurant food. As with everything, my brain gets obsessive, dissects the entirety of what I'm doing/have available, and tries to re-arrange it into new forms.

    My tendency isn't helped by the fact that my SO left a kitchen on her visit to this place that is very well stocked with Asian spices, condiments and sauces.

    So, earlier today I came up with a dish made out of three major components:
    - Fluffy, savory pancakes with corn kernels and no egg
    - Panko-breaded chicken fillets
    - Japanese curry sauce

    The individual ingredients are:
    Pancakes - all-purpose flour, unsalted butter, milk, baking soda, corn kernels. Thinking of possibly adding Paprika powder into the batter.
    Fillets - Chicken breast, Panko bread crumbs, olive oil.
    Curry - S&B Golden Curry cubes, water.

    I imagine the texture of the pancakes to possibly be off-putting, but I'm going to give the dish a shot and see how it goes.

    What have you experimented with in theory and in practice? Which successes and failures have you had?

    I imagine cumin and red pepper would be a great addition to your corn kernel pancakes, should you choose to make them again sans curry sauce.

    I love Japanese curry--I prefer Vermont over S&B. One way I love it--in a pot pie! I take cauliflower, potato, sweet potato, onion, and carrot and put it together with the curry mix/water like normal, then make a batch of double-crust pie dough and make it into a pot pie. Best curry pot pie ever.

    I'm always experimenting. The successful results of my experiments get posted over in the veggie recipe thread.

    Cheers for your suggestion, snowy :)

    I don't do spicy, so instead of red pepper I think I'd try a mix of cumin and turmeric to add to the pancake batter. Will let you know how it goes.

    Also: I have a 1kg bag of Five Spice powder, but no idea what do with it other than throw some on a chicken breast. Any recommendations?

    By red pepper, I meant sweet red pepper, not hot. You could also try sweet paprika.

    Like pho? You can make bastardized pho using five spice powder. Sometimes I just like to add a sprinkle to vegetable soup to add depth and a hint of spice. Here are some suggestions from Chowhounders:

    Tried something new again last night.

    Marinated whole chicken breasts in olive oil, black pepper and sea salt. Then threw them onto the grill till done.

    As a side we boiled three or four skinned potatoes, and pan-fried some cubed, fresh pineapple. Once the potatoes were boiled, took them out and cubed them. The cubes were then mixed into the frying pan and lightly fried, so they'd harden their outer texture a bit.

    Put both potatoes and pineapple (ratio was roughly 2:1) into a big bowl, and used a light mix of mayonnaise and ketchup to bind it all.

    Dinner was delicious. The pineapple really made the meal stand out.

    Next time, try grilling the pineapple. ;) I love grilled pineapple.
