Finished bottling my mead!

    It's going to be a very Merry Christmas! Made about 10L of this delicious honey wine, gave some away as Christmas presents. Saving the official un-corking for the Season 2 Game of Thrones premier, if you can tell by the label I made :)

    What a coincidence, I just bottle my first batch last week, though it was only a single gallon.

    I have 3 gallons of cyser bubbling away as we speak. Hopefully it will be in good shape for gifts by next Christmas.

    That looks awesome! How difficult was the process? There's a meadery near me that I've been to a few times for tastings. I'm a fan!

    It's sweet. Very sweet.

    My husband made some mead last year. It isn't our favorite of the things he's fermented. We were hoping it would mellow with age, but so far it hasn't. Charlie Papazian recommends burying some on the side of a mountain and leaving it there to age. I think I'd rather just have a beer.

    Asking what mead is like is not much better than asking what beer or wine is like. There is a huge amount of variation, so much so that it belies description, other than a general description of a fermented beverage which features honey on the list of ingredients.

    There are sweet meads and there are dry meads, much like wine. There are also beer-like meads, though I don't have any experience with those.

    Aha. I've been meaning to try some. I'm not usually into sweet drinks, so I might try to find something closer to the beer end. Though there are some sweet beers I like.

    As said above, there is a huge variety in mead, I made a drier mead, at ~ 14% abv. Do you know what recipe he used? What type of yeast? I was sure to only add a certain amount of honey because I didn't want it being too sweet.

    This is the recipe I followed. I put it together about a week before the end of September, it cleared in about 6 weeks @ 68F (I have a cabinet in the basement that by virtue of it's location, relationship to the ductwork and pure dumb luck is always within a degree of 68). We cracked the first bottle tonight with my sister-in-law and her boyfriend, we emptied the bottle in short order. It was sweet but very tasty and quite impressive for being barely 8 weeks old.

    It was so good that this weekend, if time allows, I'm going to start a 3 gallon batch.

    I was going to do a JAO but decided to do a straight show mead instead. Mine is just water, yeast, honey, and a bit of nutrient to ensure a vigorous ferment. Next time I might do an orange spice but I also kinda want to do a raspberry melomel

    Drop me a line when you make it to Vancouver and there's a glass of mead in it for you. As long a it's after April. It won't be delicious until after then anyway. I mean, it's good now, but it will soon be delicious.

    I can't believe I've not yet been to Vancouver. My grandfather told me some fantastic stories from his days as a 14 y.o. cook in a lumber camp there just after the turn of the 20th century. Someday!
