Recipe Diabetic Recipes

    Hey folks! Turns out I have gestational diabetes, and I need some help hunting down delicious recipes. Dinners, lunches, breakfasts and snacks are all helpful!

    If you're not into cooking yourself, feel free to share photos and descriptions of things you've had at restaurants that are low-carb or low on the glycemic index.

    Please feel free to share anything diabetic-friendly that you find delicious since this thread will probably benefit plenty of people who don't have my limitations. But if you're interested in helping me out specifically, I'm a lacto/ovo vegetarian, and I'm doing my best to avoid artificial sweeteners since they cross the placental barrier.

    As I find and try recipes I'll share them here with my thoughts. For now I'm flipping through the vegetarian section of Diabetic Gourmet magazine. Diabetic Vegetarian Main Dishes Recipes from Diabetic Gourmet Magazine

    Are you considering only the glycemic index, or are you also looking at the insulin index?

    I don't really have recipes in mind but rather the kind of breakfast that I want to consider making regular myself:

    Simply: steel-cut oatmeal, eggs, and whole fruit

    These are all relatively low on the glycemic index, but they are even lower on the insulin index (except fruit, which is about the same). I think they are all green-lighted by major diabetic associations as well.

    A great substitute for potatoes, noodles, and rice: cauliflower.

    Personally, I love whizzing up some cauliflower with curry powder and a bit of olive oil in my food processor. It's pretty easy to season however you want it. I have used it successfully in place of lasagna noodles as well.

    I'm just going to post titles of recipes from the low GI cookbook; if any of them sound interesting, let me know and I can post the full thing (although some of them don't need it):

    Breakfast: Portobello mushrooms with ricotta cheese and roasted tomatoes, fruity quinoa porridge, strawberry yogurt crunch, buckwheat pancakes with berries, poached eggs with spicy tomato salsa (served on a whole-wheat English muffin), berry and banana smoothie
    Lunches/Soups/Salads: Bruschetta (tomato and basil, ricotta and asparagus, white bean and olive), lentil bruschetta, chachouka (similar recipe here: Chachouka – tomato and egg deliciousness | Hands-Free Cooking), veggie chili, potato and sweet corn frittata, parsley, butter bean, and cherry tomato stew, chickpea burgers, sweet potato cakes with roast tomato salad, Tuscan-style beans with tomatoes and sage, veggie sushi, minestrone soup, roast pumpkin and chickpea salad, barley and vegetable soup, lentil spinach feta salad, couscous salad, curried lentil salad, soba noodle soup with tofu, fragrant bulgur wheat with zest, black bean soup, white bean salad
    Dinner: spinach and ricotta canneloni, adzuki bean stew, roasted pumpkin and mushroom lasagna, sweet potatoes in ginger cayenne peanut sauce, crunchy-topped lentil loaf

    Obviously, some are higher in carbs than others. If any specifically interest you, the carb count per serving is listed along with the recipe. Hope this helps.

    snowy, the crunchy-topped lentil loaf sounds pretty awesome, as does the fragrant bulgur wheat with zest. Please share those if you can!

    San Choy Bau | Gestational Diabetes Recipes I am going to have to give the cauliflower, leek and fennel soup a try. Sounds delicious. Of course there are other non veggie recipes at this site I am sure you could find a reasonable veggie adjustment for as well. The curry chicken with currents and beans I think could be quite good with tofu or hard boiled eggs and maybe some cauliflower for texture, curries are pretty forgiving.

    If they haven't set you up with a diabetic educator make sure to push the issue. They are a wealth of information.

    My husband threw this together for me last night and it kept my sugar levels nice and even.

    Slice a block of extra-firm tofu. Place pieces so they aren't touching on a platter. Put in freezer to firm up even more while starting the rest of the food. Stir-fry green bell pepper, sliced button mushrooms, and cauliflower in a little butter. Add snow peas and soy sauce, cover to steam. Take tofu out of the freezer and place on hot griddle. Douse in soy sauce. Brown that side. Flip and douse other side. Brown. Place stir-fry on bed of iceberg lettuce. Add steaming tofu to the plate. Serve.

    It was incredible.
