Food Christmas Food

    I'm curious as to what everyone has planned food-wise for Christmas.

    Like Thanksgiving, this is a holiday where I get asked to bring something. For Christmas Eve, we're having an appetizer buffet with one side of my husband's family, and for Christmas Day, we're having a prime rib dinner (my father-in-law makes an amazing prime rib). I have to bring an appetizer or two for Christmas Eve, and I've been conscripted to bring the dessert for Christmas Day.

    Here's what I'm making:
    Gougeres (haven't picked a recipe yet, there are a lot of choices, I'm leaning towards David Leibovitz's for the exact measurements it features)

    Gougeres are pretty easy (I've been making choux pastry since I was like, six--my mom's go-to appetizer was choux pastry puffs stuffed with savory fillings), the spanakopita is a little fussy but I know it will be delicious and worth it, and the trifle is boozy, fussy, but should be a show-stopper, as I feel a Christmas dessert should be. Last year I made buche de noel, which was equally fussy.

    I'll be starting tonight in order to get this all done! I also have a batch of marmalade to make for gifts.

    What are you making for Christmas? Are there any food-related gifts you're giving away?

    Christmas Eve, Sugar Daddy and I are making a turkey, Alton Brown/Good Eats style. With mash, some steamed veg, and Stove Top (cause we love it and never eat it). And scratch gravy. I may try to make some bread or dinner rolls from scratch, but I'm not sure how to jockey the oven around. There is a rumor that Sugar Daddy may also whip up some bourbon cranberry sauce. I think I'm also making a key lime pie for dessert. And either a nice red wine or scotch.
    Christmas Day, we've been adopted by our Bulgarian and Irish friends, so I'm a little scared about what the meal will be... But I'm making an additional key lime pie and a Bailey's cake (late birthday cake) and perhaps some shortbread thumbprint cookies with raspberry, apricot, and strawberry fillings.

    If you have a copy of the Joy of Cooking, the milk bread in there makes wonderful rolls and they only take 15 minutes or so of oven time, which you can finagle while the turkey rests.

    I cooked the entire Tday feast, so the only thing I'm cooking for Xmas is a bourbon chocolate pecan pie - if I can manage to not drink all the booze first.

    I'm not sure what all we'll be making, but so far, we've made no-bake fruitcake (that we got off one of Food Network's shows), and some kind of fudge with marshmallows and cranberries in it.
    Right now, I'm mainly just a glorified food chopper. ;)

    I'll also probably be making my famous (heh) deviled-eggs for our Christmas Eve party.

    Got a rolled pork loin (mmmm, pork crackling) and an organic free chicken to go on the rotisserie in the oven, thinking of doing a sultana and pine nut pilaf as a side, and my wife has a trifle in some form or another for dessert.

    Now that my "vacation" has started, I am turning my thoughts to Christmas.

    I am supposed to be coming up with some appetizers and sweets for Christmas Eve. A dinner for Christmas Day and another dinner for Boxing Day.

    The only thing I've actually considered is Christmas dinner. I am thinking Prime Rib, Brussels Sprouts, Potato Gratin and a Sticky Date Pudding for dessert.

    The only thing for Boxing Day that I've come up with is a starter of Pork Belly with Scallops (a surf and turf thing). Not sure on the mains yet... still percolating.

    Oh! Christmas breakfast... Cinnamon rolls followed by a breakfast casserole.

    Still a mess in my head but it will come together...

    I wish I could find one of my grandmother's recipes. She was German and made these amaaaazing dough balls with nuts and other things inside. They are one of the fondest memories I have from Xmas time, but I have no clue where the recipe would be since she passed about a decade ago. They weren't your normal every day nut/butter balls, they were pure sin.

    I have no idea what's planned for Christmas. When I used to spend the holidays with my family, there was almost always a honey baked ham, lasagna, and my Nana's famous brown sugar glazed carrots.

    When I started living on my own, I would usually get Chinese take-out. Since most seem closed around here on X-mas day, I like to order Chinese on X-mas eve instead.
     
  12. Pretty low-key, since the wife and the rest of the family will be leaving town the day after. Pot roast. Veggies of some sort. Bread (mmmm...bread...nom nom nom). Fudge and cookies for dessert.

    Remixer!!! Christstollen, imho, is the greatest iteration of the fruitcake imaginable. We bought one when I was a kid from a bakery and it was phenomenal. I'd completely forgotten about it until I saw the image you posted. Man, if I weren't on a high fat low carb diet, I'd try your recipe first thing tomorrow morning, but I'm already cheating with Christmas dinner, which I'll elaborate on next. I'll have to bookmark it.

    This year I'm making Beef Wellington again. It went really well last year, so I'm beefing up the recipe from a 2.5 lbs. cut of tenderloin to 3.5 lbs. because we're having more people over. If I remember, I'll snap a picture. I posted the recipe in this thread for anyone who's interested. Additionally, we'll be having mashed potatoes, the classic green bean salad, pancetta and Brussels sprouts, and homemade cookies.

    nothing fancy this year.
    I am making a batch of chili with a beautiful crusty loaf of farmhouse bread that I purchased from a local bakery.

    we are doing christmas eve (tonight) at my stepsister's house.

    we are doing breakfast tomorrow at my ex-husband's house.

    not sure yet what I am bringing to either event. I'm winging it!

    Loving your love for the Christstollen.

    It's one of my favorites during the Christmas season. A good Christstollen is moist and "dense" inside, with the texture oh so very soft. Doesn't resemble a fruitcake much other than the fruit aspect!

    How I wish I was in Germany right now...

    Went out and bought a four-bone prime rib roast yesterday. It wasn't until I got to the checkout that I realized how expensive this cut of meat is. Holy crap, I'd better not fuck up on cooking it.

    I ended up not doing too much for Christmas Eve as I was called into work and didn't get home until 9pm. Most of our guests had come and gone by then. It's Christmas now and I am just about to step into the kitchen to get my prep done for dinner. It's pretty low fuss (minus the stress of cooking the roast properly).

    X-mas eve we make KLUBE..Norwegen gut bombs !.....
    you boil a pork butt (now PC'd as pork shoulder) about 5 lbs,
    untill it's stringy,then you grind up 10# of old spuds,add salt pepper and just enuff flour to hold the starch balls you form with your hands together...add to the pork and broth..boil for hours....eat with lots of butter,1/2 a stick per person is a norm....now the real reason we do this....

    next morning,you slice the potatoe balls and fry them in lots of butter,add a bit of stringy pork and broth( now a thick gravy)...salt and pepper...maybe a fried egg or two and some X-mas bread/toast....WOWZER

    I always make a ton of English Toffee, mostly for family and then a few friends. Some years I have people paying me for it to give as gifts. We also make Butterscotch Fudge, Snowballs, and sugar cookies.
    I try to make something different for Christmas dinner every year. We've had goose, turducken, lasagne, and this year it's brisket, which is making my kitchen smell divine. My girls will be making the garlic mashed potatoes and green beans later.

    I remembered! This is one of two beef Wellingtons I made for my family this year. I use portobello mushrooms for the duxelle and it was sublime.

    I didn't get a chance to snap a picture of the trifle. As soon as it was finally assembled, the family massacred it. I did get a picture of the spanakopita and gougeres I made, however. Unfortunately, this picture washes out a lot of the color these had. I am now required to provide gougeres at every family gathering.
