Now onto something near and dear to my heart.... CHEESE!!! I love cheese but I've never really been able to pair my cheese with wine.... what kind of qualities would I pick out of the cheese to be accentuated by the wine? I understand that there's wine/cheese pairing lists out there but I'm more about discovering on my own, with help being pointed in the right direction....

Try it, see if you like it. Seriously, I'm convinced that most of these realizations are best made through experimentation. You'll figure out what you like.

Streak, regarding wine and cheese... There are a tonne of websites out there that can help you. Better yet, keep an eye out at local wine or cheese retailers as they will frequently have tastings that let you experiment.

In fact, I would suggest finding a good cheese boutique and have a talk with the people working there. If they are any good, they will let you sample and can make excellent suggestions for types of wine to pair with each type of cheese.

Yes, any good cheesemonger will have suggestions. Cheese shops seem to be popping up everywhere these days. Also, there are some very good, easily found artisanal cheeses from creameries that have good websites with suggestions for food pairings. I think from there it is easier to think about what kind of wine goes with the cheese. Even if they don't make outright suggestions, knowing the flavors of that variety of cheese will help you figure out which kind of wine will go with the cheese.

    For example:

    http://www.roguecreamery.com/
Even if you can't find Rogue's cheeses, this part of their website is very useful: http://www.roguecreamery.com/pilot.asp?pg=Suggestions (And man, I LOVE their Oregonzola and Crater Lake Blue)

Hi Streak - can't go wrong with a bit of that - it's what I did. Though I can see the logic in getting advice.

May I suggest these as a base for the cheese:

My ex and I did geeky wine and cheese tasting about once every couple of months, and oatcakes seemed to help everything hit the spot.

While you ponder all of this, might I suggest a bottle of port paired with a 90% cocoa chocolate bar?

Or brie on oatcake, top with slices of fresh strawberry; pair with a Pinot Gris, or a very dry Gewurtzraminer, in either case, preferably from Alasace.

Of course. It's common for there to be 90% cacao pastilles out during port tastings at the wineries here.
