Food Brunch!

    I didn't see another brunch thread-- excuse me if I missed it.

    So let's talk about mothafuckin' brunch foods y'all! I fucking love brunch. It's the fucking free-for-all of food options: could be breakfasty, could be lunchy, random kinds of baked goods, and you can make them fancy or barebones simple. Brunch kicks ass.

    I have, in the past, made frittattas and tortas, popovers and muffins, and other classic brunch foods. What got me thinking about making a thread, though, was the other day I made brunch for Mrs. Levite and me, and she requested special pancakes. She left it up to me what "special" should be.

    I made Swedish style pancakes, but with caramelized bananas topping it. They turned out great.

    Swedish-style pancakes

    4 extra large or jumbo eggs
    3/4 cup flour
    2 cups whole or 2% milk
    2 tbsp melted or clarified butter, plus extra for the pan
    2 tbsp sugar
    1/2 tsp mace
    1/2 tsp nutmeg
    pinch of salt

    In a large mixing bowl, beat the eggs well with a hand mixer. Add in the milk, butter, sugar, and spices, and mix thoroughly. Add in the flour and mix well to incorporate, starting on lowest speed. Batter will be thin!

    Heat a large nonstick skillet over medium heat. Put in a small dab of clarified butter, and when hot, pour a thin layer of batter into the pan and spread it to the edges. Cook until the top surface seems dry. Flip carefully using a broad spatula, and cook the other side briefly, just another minute or two. Remove from pan and roll the pancake, or slice the pancake in half or quarters, and roll the sections. Cover finished pancakes with paper towel to keep warm while making the bananas.

    Caramelized Bananas

    2-3 small to medium bananas (not too green, but still with a little green tinge to the yellow)
    1/4 cup golden raisins
    1/4 cup toasted slivered almonds
    1/3 cup brown sugar
    1 tbsp + 1 tsp best quality butter
    grated zest and juice of 1/2 lime
    1/4 cup whole milk
    2 tbsp rum
    1 tsp cinnamon
    1 tsp allspice
    1/4 tsp clove
    1/4 tsp powdered star anise
    pinch of salt

    Slice the bananas into thick rounds. Turn the heat beneath the skillet down to low. Melt the butter in the skillet, and add the sliced bananas, along with the raisins and almonds. Cook briefly, stirring regularly, until the bananas are golden, and just beginning to soften at the edges. Add in the brown sugar, the spices, the lime zest, and the rum, and mix gently until the sugar has just melted. Add in the milk, stirring gently to incorporate into the caramelizing sugar, until the caramel is smooth. Add in the lime juice and stir gently to incorporate. Cook another minute or so, stirring regularly, then pour over the pancakes and serve.

    I also added a little snow of powdered sugar on top of everything, and garnished with a curl of shaved lime zest, but these are optional flourishes.

    We had brunch with the family recently and my in-laws decided to make waffles for it. The problem with this was that they didn't get a chance to sit down until everyone else had finished eating.

    When we go out for brunch, I really like a good Eggs Benedict. Obviously, due to the hollandaise, it can be a hit-or-miss dish, but man, when it's good, it's so worth it. I also like a spicy Bloody Mary with all the fixings.
