Food Bacon or panchetta? That is the question

    On topic: I prefer Pancetta, myself. Its flavor is pretty strong, though, and I find it's something that is better consumed in lesser amounts. Bacon... that one you can eat all day long. ;)

    Neither are in the category of health food.
    As noted above pancetta is typically used in small quantities to bring flavor to a dish.
    Bacon....well you already know all about that.
    And bacon OR pancetta? Why OR? Can I choose both?

    Carbonara is probably the best Pasta sauce out there. Quality ingrediens must be used to make it orgasmic, though.

    I had a really fucking great Fettuccine Carbonara in Dubai 6 weeks ago. Loved the hell out of it.

  8. I've heard linguini carbonara referred to as heart attack on a plate. I suppose if you ate enough of these it is possible. But damned good every once in a while.

    I'll eat thin sliced pancetta uncooked, in a salad or sandwich. I wouldn't do that with bacon.

    Both of them are cured pork belly. There can be slight variations in the spices use, but it's pretty much the same stuff.

    Is bacon also cured for 3 months? I can agree that the taste is fundamentally the same, but pancetta is definitely stronger.

    We raise our own hogs.
    Our butcher makes the finest bacon we have ever tasted from said hogs.
    We pick it up about two weeks after we drop the hogs off so bacon definitely does not take that long.
    I have never asked him to make pancetta for us so I don't know the time on that.

    Sweet mother of pearl, that's sexy! I'm such a heathen; I have tried neither prosciutto nor pancetta. Not proud of it, but it bears confessing.

    I just had some awesome proscuitto with buffalo mozzarella last night.

    Pancetta is really good, better than bacon for carbonara, but when pancetta isn't available nor speck, well bacon works because it's salty and smokey. I must say I have had carbonara sauce with crumbled bacon before and it's OMFGWTFBBQ good.

    yes but you don't want to cook with it in the same way you do pancetta or speck.
