Splitting MP3 files and converting iTunes files and whatnot

I have many full albums in MP3 form and I want to split them up into their respective tracks and have them remain in MP3 format. I can do it in Nero and convert it then burn it only. If I want I can rip it back into my computer then convert it back to mp3 but that is a pain in the ass.

While I'm at it I want to make my itunes tracks MP3's so I can play them in my car. Can I do this?

On a different note, I just lost 60g worth of music (see here: http://www.tfproject.org/tfp/showthread.php?t=74909 which is not that cool but I do have a buttload of good music left. What is the best way to recoup music: online or offline?

Help is appriciated.
