Queso Fundido

This is a pretty simple dish to cook. It's best served as an appetizer. Ingredients: 1/2 lb. shredded Chihuahua Cheese 7 1/2 ounces Chorizo 1/2 large onion diced One large tomato diced Mash the chorizo, then put it on one side of the frying pan and put the diced tomato and onion on the other and cook it on a high flame until there isn't any grease from the chorizo left. Mix the chorizo with the tomato and onion. Then, spread some shredded Chiuaua cheese across a plate. Next, alternate a couple of layers of chorizo then cheeze on top. Put the plate into the microwave and cook for 90 seconds on high. Wait a few minutes, then set it to high for 90 seconds again. Then wait and set it for 30 seconds on high. Serve with either tortillas or tortilla chips. |
This sounds great. I might put it all under the broiler for a short time at the end rather than the microwave when I try it.
