Wierd cuts of meat

I was thinking about what types of venison I've tried over the years after checking out Doos' thread on venison ideas

I've had:
Deer - good
Moose - better
Elk - best
Mountain Sheep - not bad
Mountain Goat - good but a bit tough
Bear - Can be strong, but makes good pepperoni
Cougar - Quite good in a mint sauce. (I don't hunt these)
Lynx - very tender. I felt weird eating a cat. (I don't hunt these either)
Rattlesnake - I tried this when I was down in the states a few years ago.
I would like to try alligator sometime, just to see what it tastes like.

What kind of wild or weird venison have you tried? Did you like it and would you try anything different?

I've had alligator sausage. Quite tasty - but I'm not sure how much of the taste was due to the meat itself and how much could be attributed to the spices and other things used in the sausage. I enjoyed it, and would recommend it.

I'm not a big game guy.

I had fresh emu at an emu farm once, it was a good thing they fed us before taking us to see the emus, they're so cute. Not that it would have stopped me, but I probably would have felt a little guilty when I asked for seconds.

Go to New Orleans, Alligator is on almost every menu, it's good but has a very "tendony" feel to it..

I ate an old pet goat once after it climbed on top of the car. It would break teeth but was pretty tasty. Had rattlesnake but it was breaded and fried. Hard to tell.

Had aligator and turtle a few times.. pretty yummy. Had horse sashimi once.. it wasnt all that great, but it was VERY EXPENSIVE.. so i ate it and smiled Then there is the Balut story..which i wont go into..

Nope, not in my opinion. Just cook it the same as you would beef, I like mine med-rare. I've heard of people boiling it and all sorts of weird things...yuk no wonder they didn't care for it.
It's more important how you handle the animal after shooting it than how you cook it. If you allow it to become dirty or don't cool it down right away it will become gamey tasting real fast. Also, most hunters go for the biggest buck they can find which tend to be tougher than the smaller ones.
If you try venison and it tastes too strong, it's probably the hunter’s fault.
