Food What's For Dinner Tonight?

    Refrigerator stew...
    Emptied out most of the fridge 'cause tomorrow the contractors come to tear everything out. Some stuff got moved to a smaller fridge in the basement laundry room. I thought why not just throw everything sensible into a couple of pots? Strictly ad hoc, no recipe. So meat, chicken, sausage, veggies, mushrooms, onions, leeks, greens, chiles, beans, barley , tomato juice, etc., etc., and so forth. Surprisingly... turned out quite good, actually. This is about half of it. Rest is in downstairs freezer.

    Last night:

    Wendy's Chili. We use the early? original? recipe as it was first published (later versions leave out some ingredients). Bumped up the spices. Used stew meat (my wife cut up a beef roast) instead of ground beef (this really does make a difference, sort of a chili stew). Enough leftovers for a dinner and a lunch or two.

    Cornbread, homemade.

    Potatoes and onions are baking in the small tabletop oven (if you have the room for one they are super handy for "small" cooking), and I'll be starting the pan fried pork chops in a bit.

    Tikka Bun - grilled tandoori chicken, masala harissa, lemony yoghurt slaw with chilis, cucumber and coriander, red onion, and a side of curry chips.

    Screen Shot 2017-12-21 at 11.01.46 PM.png Using just a two-burner hot plate and microwave, (since our kitchen is all torn up by the remodelers) I cooked up some Swedish potato sausage with mustard dill cream sauce. Served with buttered noodles Bond-Ost Caraway cheese (called cuminost) and Swedish Crispbread. My boyfriend, who is a genuine born and bred Swede said it was quite good and an authentic Swedish winter meal.

    In a couple of days, I'll try the yellow split-pea soup. Which my mom just calls "yellow soup."

    Yesterday afternoon my wife had a nice end-of-school year late lunch. Our simple dinner was brie and sharp white cheddar, with Carr's sesame seed water crackers.

    Took my family out tonight
    A nice Italian restaurant
    Appetizers & Wine
    A variety of traditional pastas and fish entrees
    And luscious desserts

    Calimari & Mussels
    I had mahi-mahi and mushroom risotto
    The others had traditional pasta
    For dessert, cheesecake & tiramisu

    But the best thing was just spending time with my family finally.

    Broiled burger patties topped with sharp cheddar cheese, real French fries, & green beans.

    I nailed the patties, kept the seasoning simple, garlic and Italian seasoning, and managed to cook them done (for my wife) without drying them out.

    Boneless pork ribs we baked in the oven, Bush's homestyle baked beans and a huge salad. Couldn't eat it all, delicious though. Killed the salad, left half of the rest.

    We'll do an early dinner, traditional New Years Day good luck meal:

    Black-eyed peas (cooked with some fatty ham bits, & other seasonings), sautéed cabbage (with onion, garlic, salt & pepper), & homemade cornbread.

    Focus on the money this year, as the luck tends to rip up both of our stomachs.... Collard greens cooked down with ham, onion, and garlic, ham steaks, and for the carb this year, I'm making sweet potato latkes.
