Food What's For Dinner Tonight?

    with Chicken and Blue cheese Stuffed Olives covered with Alfredo sauce.

    Fusion cuisine. Leftover mu shu pork on a tostada shell, with a little cheddar cheese, and chipotle pepper, broiled for a couple minutes. Not my most successful effort.:rolleyes:

    Soy Sauce K.F.C. - Korean Fried Chicken in soy, garlic, and ginger (half chicken)
    Honey Butter Fries - wedge cut potato fries soaking in honey butter sauce

    Rib eye roast. Baked. Semi-complicated recipe from an America's Test Kitchen cookbook. Our first time cooking RER.

    Spinach. Sautéed with mushrooms and onions.

    Yams. Baked.

    Hubs birthday dinner... He had a wedge salad, 22oz bone-in ribeye, fries with bérnaise, broccoli, and a few Manhattans. I had a Fulton burger with no bun, fries, and a glass of wine. We finished with caramel truffles, espresso truffles, and, a macaron each. I had a cuppa coffee with frangelico. Best steak in the city right there.

    The recipe needs some tweaking. The roast didn't turn out medium as the recipe said, it was rare. My wife, who can barely stand any pink, was a trooper, no complaining, no throwing it in the microwave.

    We found the problem, the recipe was for a boneless RER, ours was bone-in. No wonder the cook times were "off."

    preheat your oven to 400

    1" thick bone in pork chops
    carmelized onions
    sliced granny smith or winesap pealed

    pocket the chops carefully and sprinkle inside some cinnamon
    stuff the pockets with sliced apples and onions... sprinkle with a little fresh thyme or rosemary
    toothpick if needed and sear in a hot cast iron skillet - move to your preheated oven

    bake at 350 for about 30 minutes and let rest

    we like to serve it with garlic Brussels sauteed in balsamic and butter with baked sweet potato wedges (which you can do together with/while the chops are baking)

    Last night was soft shell (flour tortillas heated in the microwave) tacos and Spanish rice. The rice and meat were cooked with plenty of veggies. It was a team effort that turned out very well.

    Tonight was taco night at my favorite Mexican restaurant.

    One braised, roasted and grilled local brisket in a house-made tortilla with salsa verde, onions and cilantro.

    One crispy masa tempura-battered mahi-mahi with shredded cabbage, Mexican crema and a salsa Mexicana of tomato, onion and cilantro

    and I finally tried a Chapuline taco - the Oaxacan specialty of sautéed grasshoppers, shallots, tequila and guacamole.

    I needed extra guac and a few squirts of fresh lime before I could tackle the grasshoppers. It was okay but once is enough for me.
