    I made vegetable stew last night because I accidentally bought too many potatoes. It came out quite nice and there are leftovers for lunch today. I'm thinking I'll do a vegetarian chili as well this week at some point.

    We're down to eating meat maybe twice a week these days. Vegetarian is just so much healthier (and cheaper) that I find more than that hard to justify.

    Unrelatedly, I am thinking about trying my hand at some shiitake burgers. A chain restaurant in my town does them -- pretty much just bread the head of a shiitake, fry it, put it on a bun with toppings. It's really good but I think I could do them cheaper if not also better at home.

    Are the shitakes you have big like portobellos? When we have them around here they are quite small, but have good flavor. My fella makes us smokey mushroom burgers he salts then, pops them in a mesh strainer, and then on top rack of charcoal grill for 20 min.
    Loved fried mushrooms as a kid and I'm curious about the fried shitake burger, as have never seen them like that!

    Oh, maybe they were portobellos after all. I'd have to double check, I may have gotten a wire crossed. I just know they were tasty, and remember thinking I could probably make the same thing at home for less.

    Regardless they sound really tasty!
    Friends are making venison fajitas and having a fire pit tomorrow so I'm bringing a veggie appetizer. We'll eat a bit before we go then bring homemade salsa and guacamole.     The Fuzzy fellow is going shopping for ingredients, something weird is happening in my left leg and I can't go. I'm making a lime crema to go w/ the mini taco salads, adding pinto beans (maybe), and just in case he's picking up scoop style tortillas in case I blow it on the shells. Cooking shows have taught me always have a back up plan. lol.

    @Magpie made tasty vegetarian pad thai tonight. I haven't had good pad thai since I moved out of the city, so that was a nice surprise.

    I still have too many potatoes but they're dwindling. We're going to a pig roast this weekend, @Magpie is making black bean brownies to take with us. I might do a potato salad as well, time permitting. The pig is obviously not vegetarian (I mean, it might have been, but the people eating it won't be) but that doesn't mean our contributions can't be.

    We usually show up with vegetarian dishes as well to parties. Black bean brownies sound really interesting! What kinds of potato salad do you like to make?

    Fuzzy made quick panzanella with constellation tomatoes, kalamata olives, thai basil, bread toasted on grill, w/ fresh mozzerella, a touch of balsamic and grilled artichokes tonight. Our second time having something similar in a week, but I swear it is becoming comfort food he loves it, one of our kids does, one does not, and i think it may have replaced penne & cheese in my heart.

    No idea if this counts as cooking, but I've recently been really into a version of cucumber salad of which I make a batch pretty much every week.

    - 1/2 cup white vinegar
    - 1/2 cup water
    - 4 tbsp raw sugar
    - 1 tsp salt
    - ground black pepper to taste

    Mix all of that in a big bowl, then throw in 2 very thinly sliced cucumbers, 1 finely chopped onion, and 1 less finely chopped red capsicum.

    Let it all get lightly pickled in the fridge for 3-4 hours, drain almost all of the liquid, throw in 1 can of sweet corn kernels and mix well.

    If you love crunchy, sour and pickled stuff, this concoction is highly addictive.

    At least to me. SO hates it.

    Nice! Sounds like it works as a quick pickle maybe? Is that how it tastes? :)

    We make one with diced cucumber and avocados with a tiny bit of sour cream (or greek yoghurt) sprinkled with black toasted sesame seeds. It is a favorite in our house!

    Yeah, it is a quick pickle. A couple hours is great to get that pickled, crunchy texture going. The sourness of the pickled veggies with the sweetness of the corn kernels goes really well together. And all of it is super crunchy, so I can't get enough of the stuff. I mean, I like to chew on ice cubes when it's hot out....

    I've heard of cucumber salads involving sour cream before but never tried it. Gonna make sure to give it a go in the coming weeks.

    Last night was one of our 1st real experiments with crumbled TVP. My husband made a tasty spaghetti puttanesca and it ended up seeming like a meat sauce. I'm not used to meat sauce but the kids are and LOVED it! Very successful first try, so we're eager to try other varieties as well. I think it was @snowy that talked about tvp here, and if so thank you, and if not thank you all for the idea. :)

    We're using the mealime app on desktop and our phones so tonight I'm making tofu, pea, and carrot fried rice. :) Have to give props to my husband, he said he wouldn't eat meat anymore and it has been a month! :D I'm really proud of him, and I think he's lost the taste for it.

    I'm going on two years as a vegetarian. My only regret is I didn't start sooner. I have tremendous guilt about it. I've almost also cut out all dairy and hope to one day be vegan. My skin has never looked better!

    Doing an SCA project and going through renaissance (and inspired) cookery...this makes me long for fall. I love summer, but I also love making savory pies. I like this recipe though we don't use onion and sub an item or two. As for veggies, whatever is local and seasonal will work wonderfully!
