    Last night:

    Meatloaf, with three strips of thick sliced bacon on top.
    --With onion & mushroom gravy. My wife improvised, it turned our very well.
    Green beans. Frozen, but the Kroger brand Italian Cut GBs are pretty good.
    Baked potato, loaded (oops, just remembered that we forgot the chopped green onions).

    Sirloin tip roast.
    Rubbed in salt, pepper, and garlic.
    Grilled on medium heat to medium rare.
    After resting, we slice it very thin and serve it with tomato, onion, and horseradish sauce (also awesome on a hoagie roll, but trying to avoid extra carbs).

    Fresh snapper on a bed of sweet plantains, topped with onions, red and green peppers, zucchini, doused with Pernod, wrapped and steamed in foil.

    Spaghetti.
    Onions, green & red bell peppers, sauteed in olive oil (cut with a little canola oil), flavored with Italian herbs, garlic, & salt.
