Food What's For Dinner Tonight?

    My mom used to make Hungarian goulash. It was really good. Plenty of okra, tomatoes, & rice, but you'd need a magnifying glass to find the ground beef. That was just part of feeding a family of five on single income blue collar wages.

    Last night was Chappel Hill Smoked Hatch Green Chile sausage, baked potato (the chopped green onions added a great taste), & carrots.

    Tonight my wife is dining out with some fellow teachers before they attend the rosary service (or whatever the Catholic service is called) for her deceased friend. My dinner will leftovers--baked chicken and veggie rice.

    No fucking clue, as I have training until 6:30 and won't be home until 7. I prepped food to go into the slow cooker, but since I'm not going to be home...

    ( while watching the cowgirls getting their asses handed to em ) :(

    Poached sockeye salmon (too dry this time), mashed Japanese sweet potatoes (amazing) and steamed broccoli with some Cigar City Good Gourd and then a bottle of Chateau St. Michele Cab. Happy Sunday.

    It needs to be good because our dinners this week have been mediocre at best:

    Mon--Digiorno four cheese pizza, with some added toppings.
    Tue--Left-over roast beef & carrots, with baked potato. Same as we had Sunday.
    Wed--Beer battered cod, baked, with mixed veggies (both frozen).

    Dude that blows, we had breakfast, eggs, blue and gold bacon and sausage,Braums hashbrowns and cinnamon toast with honey.

    It was a delicious collaboration with our friends... They did tacos, I did salad... Sautéed sweet potatoes, kale, carrots, and onion seasoned with sea salt and cumin, grilled strips of filet mignon, homemade pineapple salsa, and crumbled queso fresco. They used Ezekiel wraps, corn tortillas, an crumbled Point Reyes, too. Schramsburg brut rose as well.

    Sandy made brown beans with fried okra and potatoes, she fries them together, corn bread, sliced onions and turnips. A big glass of ice cold milk

    We tried some prepackaged marinated 'fajita' chicken breasts. They were OK. I added plenty of sliced onion & green bell pepper. After I removed the breasts, I contiuned to cook the veggies a few minutes with a little Worcestershire sauce, reduced sodium soy sauce, & apple cider vinegar (that's my "all purpose" marinade). Served on Mission flour tortillas with salsa & grated sharp cheddar cheese.
