Food What's For Dinner Tonight?

    Basil Chicken in Coconut Curry Sauce. Last night.

    I'm attempting to post a link to the recipe at the Better Homes & Gardens website, but my computer has started slowing way down and/or freezing when faced with long running scripts. Navigating eBay is now a major PITA.

    Anyway, the dish & recipe. We're going to tweak it with extra curry powder, add some garam masalla, increase the red onion by 50% (already done, misread the recipe), and figure out an additional fresh veggie that would work with the spices (maybe something a bit 'sweet' such as carrot &/or red bell pepper).

    Aha! Finally.........

    I have some coconut curry simmer sauce, a bunch o'veggies, and a few chicken breasts.
    I think I'm going to make some chicken and veg curry tonight after I get back from the "beach".
    My brain is too fried to cook creatively.
     
  3. I made a pasta salad with tomatoes, cucumber, olives, leftover grilled chicken and Italian dressing. I had some fresh pineapple on the side. It was awesome.

    Last night was a traditional (at least in the past) British meal.

    A few nights ago my wife made two steak & kidney pies. Ruff puff pastry made from scratch. There's really no point in going through that much effort to make just one pie.
    Oven roasted potatoes. Olive oil (it makes a huge difference in the flavor over regular cooking oils) & onion soups mix. Chips (fries) would've been more traditional, but we had leftover ORPs and needed to make room in the fridge.
    Peas. Boiled.

    Two low FODMAP banana-coconut cookies, one paleo dark chocolate chip cookie, 3.5 ounces of Applegate deli turkey, and a Hotter than Helles Lager from Cigar City.

    Lasagna. Got some awesome goat cheese at the farmers' market this past weekend that is going in it.

    Fuck. I want lasagna now. I have nothing with which to make lasagna. Well, that's not true. I have everything except noodles. The question is: do I want to walk to the store?

    I might opt to make vegetarian pastitsio instead. Greek Vegetarian: Vegetarian Pastitsio (Greek pasta bake)

    Applegate deli ham, organic yellow mustard, and pickles... Rolled up. And some of the mix when I was making skinny monkey Popsicles.

    Can I get a visual on the curry paste y'all use? I'm having a difficult time tracking it down I'm Kroger. Maybe you can't get it here?

    I use a different kind of curry paste than most people, as it's a local product: Welcome to Thai and True - Bring home the Thai! It's AMAZING. It also comes in a much bigger jar than the Thai Kitchen paste (6 oz vs. 4 oz): Thai Kitchen - Red Curry Paste The Thai Kitchen paste is pretty ubiquitous; I think you can even get it at Wal-Mart. If you go to an Asian market, look for the curry paste called Maesri; it comes in a can.

    Hope that helps. Were you interested in getting several curries to try, I would definitely look into ordering from Thai and True. We enjoy every flavor we've had from them, and we've tried them all. It's not abnormal for us to have 3-4 different jars of curry paste in the fridge at one time.

    I also use the Thai kitchen curry paste and Kroger here carries them. I prefer the green and red.

    Tonight was a grilled chicken breast and steamed spinach drizzled with olive oil. Simple, but good.

    Nope, it's my lazy intern dinner. Plus, I don't eat bread or grains, so... ham it is.

    Skinny Monkey Popsicles
    Take 3 ripe bananas, slice and freeze 30 m.
    Chop 2 squares of 80-85% cacao chocolate finely, 2-3 T unsweetened coconut, and 9 or 10 walnut halves.
    Blend the frozen bananas, stir in the chocolate, coconut, and nuts.
    Put into popsicle molds and freeze for at least an hour before eating.
    More solid 3 hours out.

    I based them off the Chunky Monkey ice creams. Made up the recipe. I'm addicted.
