Food What's For Dinner Tonight?

    Made one of my all time favorite easy dinners.

    Cook up a about a pound of whole wheat pasta (penne or rotini works best).

    Brown a whole yellow onion in some olive oil, throw in some garlic.
    Add a 10 oz package of baby spinach, cook 2-3 minutes until wilted.
    Add 2-3 diced Roma tomatoes.
    Add 3 chopped sundried tomatoes in oil.
    Add al dente pasta, toss to coat.
    Add 1/2C - 1C (depending on how you're feeling) Feta cheese, toss to coat.

    I served mine with a quick grilled chicken breast on the George Foreman.

    So good.

    My boys have asked for "Meat Lovers" pizza tonight - been out and got hungarian salami, Bacon, cabanossi and chorizo (as well as some mushrooms and olives - surely I have to add *something* vegetabl-ish). Just need to whip up some pizza dough.

    The ribeyes are ~22oz each. There are 3+ lbs of bacon (gonna candy it).

    I didn't take pics of the chicken, just pretend there are 4-5lbs of chicken here too. :p

    The bacon doesn't go bad or anything, but it is definitely WAY better when it is right off the grill.

    Last night we had 'last minute' quesadillas. 100% whole wheat tortillas, onions, mushrooms, garlic, chopped lunch meat, sharp cheddar cheese, & mozzarella cheese. Not "ooh, ahh" great, but not bad at all.

    Coors Light is my tailgating/party beer of choice. I generally don't drink it while out at bars. We had a taster tray that included a lovely beer dubbed Harry Porter and the Bourbon Vanilla Beans, but because I was driving, I only tasted a bit and drank Diet Coke.

    Parmesan crusted chicken with roasted leeks, Brussel sprouts and mushrooms. And some radishes sautéed in butter, salt and pepper.

    I'd never had radishes prepared that way. They were awesome. Definitely recommend.

    Having a crew over to the house again tonight. Brats, burgers, and brat burgers.

    Brats are cheeseburger flavored. Brat burgers are in several flavors, including pepperjack, southwest chipotle, and chili cheese. :cool:

    Chicken fried steak (1st time cooking it), garlic mashed potatoes, & lima beans.

    Blue Bell Strawberry Cheesecake ice cream and/or Blue Bell Coffee ice cream. Possibly with ginger snaps, chewy with plenty of ginger.

    Now I'm craving sausages from that grocery in Chicago that I can't remember the name of, and some habanero ginger snaps. I had baby carrots and sunbutter for dinner. Because I list track of time and it was too late to cook. Luckily, I LOVE sunbutter and baby carrots.

    A side play on my fav pan seared pork chops and rice.

    This time I used some EVOO and first put in some mushrooms...spiced up with some Italian seasonings and Worcestershire sauce.
    Let them cook until well done...then put in the chops...a bit more spices and Worcestershire.
    Cooked them thoroughly.

    Whipped up a bit of brown rice...put a touch of garlic on them...then poured over some of the remaining EVOO and mushrooms from the pan.
    And the chop atop.

    And a bit of milk for a liquid.

    Turned out brilliant. very tasty.
