Food What's For Dinner Tonight?

    Last night I baked chicken breast (the huge growth hormone ones from Sam's Club) topped with fat free Zesty Italian dressing, rather than my usual method of broiling them. With steamed carrots and brussel sprouts.

    Tonight I'm a bachelor. I throw something edible together.

    All things can be paleo. I've made paleo pad thai with cabbage noodles, red sauce with zucchini or sweet potato "noodles," stuffed poblano peppers, paleo curry, paleo pancakes... you name it, someone has come up with it. :) And, man, do I feel so much better these days. No belly bloat, no tummy troubles, as long as I stick to it.

    I'm really glad that it's working for you, fair noodle, though we've heard about your tussle with cabbages....

    I've been trying to take more of a "whole foods" approach over the past few years, to try to limit additives. It's kinda frightening when you start looking at all the crap that is added to processed foods. And, in many cases, they have nothing to do with the food, just cheaper ingredients to increase shelf life, etc.

    Anyway, whatever you've been doing has certainly been agreeing with you, and there's no doubt that you look as wonderful as you feel.

    Last night was:

    Lean pork chops. Pan fried in Smart Balance marg with garlic, lemon peel & orange peel.
    Asparagus. Sauteed in butter, garlic, & lemon juice. Topped with roasted sesame seeds.
    Baked potatoes. Marg, cheddar cheese, & sour cream.

    There are two things I despise in food more than any other: margarine and Cool Whip.

    My wife got on the Smart Balance kick based on a suggetion from her doc. I go along with it.
    In many 'nicer' recipes we use real buuter (such as the asparagus).
    And she/we make a mean no-bake chocolate desert using Cool Whip (the full fat stuff).
    So there :p!
    Seriously, it's really good.

    No, just no. I can't stand the way Cool Whip coats my tongue. It has a weird mouthfeel that I dislike.

    My husband only used Smart Balance when we met. My MIL is one of those people that bought into the low-fat/no-fat craze in the 90s and has yet to recover from it. We use whatever fat seems appropriate for the recipe--EVOO, butter, coconut oil, canola, Earth Balance (Smart Balance's vegan cousin, very good in pie crust), but I refuse to put anything other than butter on my bread.

    I worked with a young woman with food fats (near)phobia. She worried constantly about avoiding fat in her cooking, and always felt that she was five pounds overweight.

    The thing is she loved to cook, was in her late 20s/early 30s with no health problems, was pretty, and had a figure that many women would kill to have. If I had been her hubby I would've given her a Victoria's Secrets credit card. It did no good to compliment her, and tell her a little fat in your diet is actually good for you.

    Tonight will be a large garden salad made with all kinds of goodies: Red tip lettuce, spinach, tomatoes, carrots, onion, radishes, etc. It's a shame we didn't think about mushrooms during two shopping trips :oops:.

    Last night was pork roast slow cooked in the crock pot*, spaghetti squash, & steamed brocolli.

    * In another thread I had mentioned the crack in the ceramic crock that was clearly a manufactoring flaw (we take good care of our cookware). Last night when we transferred the leftover roast into a storage container, my wife pulled up the foil to drain the juice and have me scoop out the onions. The damn crock finally cracked all the way through and a piece was loose.

    We left the roast slow cooking while we visited her parents and went grocery shopping. If she hadn't lined the crock with foil, we would've came home to a huge mess, and/or a ruined outer container, or even a house fire.

    Rival will be hearing from me!!

    Two eggs scrambled with some uncured sliced ham.
    And two zone-blocks of Roasted Balsamic Strawberry and Basil "ice cream"... it's vegan and processed sugar free (I made it) and ridiculously fabulous.

    I'm going to throw some things in the crockpot in a while here to make an easy stew. @ralphie250, this stew takes but a few minutes to put together and the beans provide the protein. It's just black beans, corn (frozen), okra (frozen), onion, and red pepper along with some seasonings to make it spicy. Then we serve it over rice or quinoa.

    Does the okra get slimy? I love raw okra, but can't take how it gets all slimy in stews.

    In the slow cooker, it gets a little slimier than it would were I to cook it in a skillet. If I cook it in the skillet, I usually only cook it until everything is heated through, and then the okra is typically not slimy.

    I forgot to add the can of tomatoes to the list of ingredients.
