    I have a question, seeing that you're in E TX. I'm a native Texan and Ive always known milk gravy as milk gravy, but my friends from Texas & the south call it cream gravy. What name do you use, and hear most often?

    I like my milk gravy over hot biscuits and over scrambled eggs cooked where they're still moist but not undercooked. I used to like Blue Ribbon bacon because BR is based in Texas, but I started noticing a chemical taste in the bacon, and the grease didn't properly congeal, too watery looking. My new favorite is bacon Wright's Brown Sugar.

    Yeah, born and raised in Texas myself.
    It's always been cream gravy growing up in my house, but my mom was born and raised in New York and I'm not sure how much Yankee sayings/ways have been integrated in our ways.
    When she married my dad, she moved with him out to West Texas to live with his grandparents while he went to school.
    My great-grandmother taught her how to make Southern food, so there again, I'm not sure how much that influenced her vocab or cooking ways.

    Around here in E. Texas, I usually hear cream gravy.

    In the end, you can call it what you like, as long as I can get some gravy.

    My parents were from Oklahoma, I grew up knowing it as milk gravy.

    My mom would 'scorch' the milk when she made milk gravy, I guess that's a quick substitute for buttermilk. I cook, but my wife cooks the milk gravy. She doesn't scorch the milk, but she does makes a nice rue, which I don't recall my mom doing.

    I think I know what we're going to have for breakfast on Sat morning. Yummy.

    I'm from Florida. That's biscuit gravy, sausage gravy, or red eye gravy, depending on the meat or lack there of.

    I never had sausage gravy growing up, it was always (and still is) made with bacon drippins. We even keep a container of bacon grease in the freezer, even though we only have milk gravy maybe once a month. It also works in a pinch to flavor black eyed peas. Never had much exposure to red eye gravy, a friend from Tennessee said it's pretty common there.

    We never ate much bacon growing up, so no drippings.
