Food What's For Dinner Tonight?

  1. Had a decent ribeye with some garlic mash, washed down by way too much Angry Orchard. It was a fun family get together at Outback. We were fake Aussies for a couple of hours.

    Stir-fried dinosaur kale, baby kale and chard, spinach, little fancy mushrooms, ham, and green onions. Topped with a soft fried egg, over rice. So yum.

    Taco meat--ground chicken seasoned with onions, chili powder, cayene pepper, garlic, cumin, & a little sugar. Mission brand Soft & Fluffy flour torillas. Lettuce, spinach, & tomatoes. Cheddar cheese. Pace Chunky salsa.

    It was delicious. I'll probably make it again for lunch. I'm addicted.
    As my hubs pointed out, it wasn't as soft fried as I wanted... the fresh eggs get stuck to the pan when the yolk ruptures.
    The other side was smooshy and yummy, though. Didn't like these mushrooms as much.
    I like baby bellas or shiitakes better in this dish. More earthy flavor.

    Local store has whole pork butt roasts on sale @$1.77lb this weekend.
    I'm gonna cook up a big batch of pulled pork, ala mexicana and use up some of the 25lbs of Hatch green chiles that I bought last summer.

    What's the difference between dinosaur and baby kale? I've never noticed different kinds at the store.

    Dinosaur kale also goes by the name lacinato kale: Lacinato kale - Wikipedia, the free encyclopedia It's just a particular cultivar of kale; there are many. Baby kale tends to be a couple different varieties picked while young. Dinosaur/lacinato shows up at stores now and again; the more common cultivar that shows up in the grocery store is green kale.

    Quick bare bones nothing in the cupboard/fridge dinner:

    Egg Drop Ramen

    Bring 1.5 c water to a boil
    Add half of the ramen seasoning packet, a few splashes of soy sauce, and a few squirts of sriracha,

    Add ramen noodles, cook for three minutes, remove noodles into serving bowl.

    Beat one egg, stir the liquid in the pot vigorously, add egg, boil for a minute or two. Pour over noodles.

    Dinner was awesome.
    I successfully roasted cauliflower (a feat in itself... I always burn it or undercook it) steamed and roasted broccoli, and pulled together some red quinoa with green onions and little fresh grated parm reggiano.

    Re-run of Christmas dinner: apricot-maple ginger glazed ham, candied spiced sweet potatoes, green beans, cranberry relish, and cranberry sauce.

    Amazing paleo stuffed poblano.

    I shared it in faceyspace, but since it was so easy, I thought I'd pass it along here, too.
    Sautee some onion and mushrooms with garlic, add in lean ground beef and brown with cumin, chili powder, salt, pepper, red pepper flakes, and some green onions. Drain off any excess liquid. Mix with a little shredded cheese as a binder and stuff it into a deseeded and deveined poblano. Bake 20 - 25m at 350F on a foil lined baking sheet.

    Save the leftover meat and veg to top with a soft fried egg tomorrow. Yep, yep.

    Rerun from last night's dinner. Roast turkey, stuffing, mashed potatoes, green beans, cranberries....yum.

    Homemade pecan pie for dessert.

    Hot and sour soup from the healthy Chinese place down the street that uses no preservatives, MSG, or other nasty shit.
    It's so nice to see hot and sour soup colored naturally brown from the stock, instead of fake red from the food coloring.
    And FOUR kinds of mushrooms. Yummmmmo. Perfect pre-yoga dinner.
