    I made these brie and apple bites the other week for a housewarming party. I saw it on Pinterest. They didn't wrap the bites up all the way, but I would if I did it again, as the brie I used oozed out of some of them. Just cut puff pastry into small squares, put a tiny bit of brie and a small slice of apple on it, sprinkle it with some nutmeg and coriander, then seal the puff pastry up around the brie/apple. Bake for 10-15 minutes at 400 until golden-brown.

    I've been on a Gouda kick. O how I've been!

    I've also been enjoying this applewood smoked cheddar the SO and I really appreciate.

    I need to branch out though. Every time I get to the cheese bins, I freeze up at the cheeses with names I don't recognize. I then pick something familiar.

    I need to experiment more. A little research first....

    MMMM, one of the local places (and by local I mean in the same State as me ;) ) makes a smoked applebox cheese - so good!

    What I always buy in the store. Grew up with that brand in the house, and toured the factory back in high school on a church youth field trip. We also the saw the blimp hangars over at the old airfield and they were both intact then so that must have been 20 years or so back.
    They sell something with "Idaho" in the name over here and I have no plans of even trying any of those.

    They're still there. We drove through Tillamook 2 weeks ago but didn't have time to stop at the cheese factory. My husband did make sure to point out the blimp hangars, though. He asked if I knew what they were--as if I didn't know. Isn't that like a requirement to be an Oregonian?

    I visited the aircraft museum in the surviving hangar back in 2004 and took pictures. They even had an F-14 from the JFK which I may have very likely walked around back in my active duty days. Off the top of my head one of the hangars burned down in 1994? when they were both being used for hay storage still. I forgot how to read when I saw the 'no tresspassing' signs and took some pictures of what was left of the burned out one.

    It is huge, and you do have to ignore clearly posted signs to get a decent look at the remnants of the empty frame of the other now.
    edit: perhaps I should post my pictures from that trip again. They came out quite decently for a Canon G2 with a ridiculously slow shutter and (almost) no bokah.
    edit2: snowy twisted my arm hard enough and I am working on a fresh upload of pictures from my Tillamook visit. I would love to go back there with the much nicer camera and lens that I have now.

    Coffee crusted bison burger, cooked to medium, topped with smoked, thick cut pepper bacon, and all topped with a mound of fresh goat cheese.

    I'm drooling thinking about it.

    Damn it, TFP. I was just saying I need to cut back on dairy, and this thread pops up. Sigh.

    Cheddar is my favorite, as sharp as possible. I'm also in love with hickory smoked cheddar. And feta. Oh, my lord, feta.

  19. I did buy Extra Sharp Cheddar, Kerrygold Dubliner and Pepper Jack yesterday.

    CinnamonGirl If you like cheddar find some Kerrygold Red Leicester It is my favorite cheese but the store was out yesterday. Incredible cheese.

  20. Gjetost, very thinly slices and laid on hot buttered toast. Closest cheese gets to being fudge I think.
    Colliers - has a bite to it. Cornish Blue I also like a lot.
    Christmas they bring out cheese with amaretto - dont like christmas pudding cheese. Its just so wrong somehow.
