    Eggs!

    I love eggs. I will eat them just about any way you can think of. Among my favourite ways:

    Scrambled (butter, cream and medium low heat)
    Over easy (I am not a fan of poorly made sunny side up with the jelly bit... ugh)
    Omelette (fluffy and gooey with cheese)
    Soft Boiled/Poached/SousVide (with toast and a little salt)

    I went through a phase early this year where I had to have soft boiled eggs for breakfast ever day. I am now on a hiatus.

    I have to say, the 62c egg, cooked sous vide take some time, but it's worth it.

    As snowy graciously pointed out, I like me some sunnyside-up eggs. I don't often get to eat them that way, and only have them when I am home and have standalone bacon rashers to go with it.

    My favorites are poached eggs and omelettes.

    Poached eggs together with champignons and Nürnberger sausage.

    Omelette either filled with chicken breast and gooey cheese, or as an Omuraisu.

    I do this with a Cuisinart Griddler. First I fry some onions, jalapenos, and garlic (maybe some sausage or bacon) in a little olive oil in a very hot skillet, stir in the shredded potatoes to get them just a little coated in oil, then glop the whole mess from the pan onto the Griddler, Spread it out a bit, close the lid, and cook on high for about five or six minutes. Or until it mostly quits steaming.

    I love eggs. You can cook them any way you'd like, and I will probably love them. If I go to a restaurant, I usually order over-easy, or eggs-in-a-basket (or whatever you'd like to call them.) At home, I'm more likely to have them hard boiled, with a little butter and a lot of pepper.

    I think the only way I DON'T like eggs is deviled And really, it's only because I don't like mustard.

    I've never done eggs sous vide. It always seemed like a lot of bother. Maybe I'll give it a try this weekend.

    The style of this kind of omelette escapes me. I believe it is very thin, if the scene in Tampopo is anything to go by, like a tortilla. I'd like to try it sometime, as I am very into vegetarian Japanese food. But from observing how it's done on various sites and videos, I need some really awesome chopsticks to make it happen. Mine are long gone, sadly.

    I have no idea how the Omuraisu is actually made. My SO makes a killer one, though. Very nom nom.

    Will ask her to make one for breakfast tomorrow so I can take some pictures of the process.

    I don't like runny eggs.
    I like them scrambled or over medium. (I like when they get brown and crispy around the edges)
    And yes, if i am frying them, i do cook them in the pan that i made the bacon in. Not the scrambled ones, though.
    I like omelets. There was a place on the other side of town that we used to live near that made the most incredible feta and tomato omelet. So that's my favorite way of making them now. Even though my own don't come out as well.
    I also had a frittata once at a local restaurant that closed down that was made with onions, bell peppers and chorizo that rocked my world at the time. Haven't tried remaking that one.

    It's a lot of bother, so I don't do it often. But, when I am in a soft boiled egg phase, they are great.

    If you ever find yourself having breakfast in Chicago, go to Lou Mitchell's and try one of their Greek omelets. If you like feta cheese in an omelete, I think you'll dig it. They are very generous with the feta.

    I don't like my eggs very runny, either - although I prefer the yolk a *little* runny if I have a boiled egg for breakfast, so I can dip toast in.

    I default to scrambled eggs, because I usually prefer not to have the whites and yolks separate (yuck). I scramble my eggs with sausage or bacon bits, kale, and other veggies if they're easy to prep (peppers, celery, etc.). I don't make omelettes much (I just prefer to scramble everything together rather than be precise), but I do sometimes make quiche.

    Granted, I don't eat bread often at all, so that probably plays into my egg choices as well.

    my flavour of the month is a veggie omlet.... I like scrambled with a little bit of goat cheese thrown in while mixing. The only thing I really shy away from is probably sunny side up, I got really sick from it one time and it put them on the back burner so to speak.

    I'm another one who a) loves eggs, and b) loves them done in a variety of ways.

    I like the versatility of convenience of eggs.

    I like how I can quickly whip up a vegetable omelette after kickboxing class. It takes just minutes.

    As a breakfast, I normally do over easy on whole wheat toast. I sometimes throw in some back bacon.

    For a treat, I absolutely love poached eggs with hollandaise. (Yay, eggs Benny!) I love it served with spinach, asparagus, smoked salmon, and/or back bacon. On an English muffin is nice, but I'd prefer some kind of potato/hash brown base if it's on the menu. (I don't cook this kind of thing at home.)

    I prefer my eggs cooked soft, but I also appreciate hard-boiled applications, such as devilled eggs and such.

    On occasion, I like to just have some scrambled eggs for nostalgic reasons, as that's how I used to cook them exclusively as a youth.

    I also believe ketchup is a travesty, but Sriracha is a delight.

  20. My wife gets Egg Beaters as she has to watch her cholesterol. Can't tell a difference but you better only want scrambled.
