    This list of recipes has been amazing. I'm watching a ton of Masterchef and Top Chef shows to kinda get a sense of how people put things together and what can go wrong. I like watching professional chefs cooking and stuff, but I also like to see what causes things to go wrong, so I don't do the same. And I love Alton for the science of things.
    My pudding was a little lumpy, but I used the crappy burner and a silicone whisk, so I'm going to try to use the consistent burner and the little whisk to do the dry ingredients and the six egg yolks to get them smooth. I also used too big of a sauce pan... my 8-qt instead of the 4-qt it called for.
    The ganache turned out perfect, but I didn't know what it was going to do, so when I spread it, it didn't run over the sides as much or as consistently as I thought it would. So I know what to do Monday. The cake also got a little dried out, so there are a number of things I can change a bit to make it perfect :)

    noodle, I'm kind of surprised that the recipe doesn't call for you to add the egg later and temper it. The lumps could stem from that. Also, a sieve fixes everything.

    Ha ha, I didn't think about a sieve. It literally thickened in 30 seconds, like POW. I think the inconsistent heat was part of it. But the spaghetti sauce was on the other burner. I was cooking and stirring it, stirring, stirring, and at 9 minutes and 45 seconds it just changed completely.
    The pudding may be a bit different because it has to set firmer for the cake. It's not a true pudding, and it's supposed to be really rich and yellow. I used heirloom eggs for the cake, which made it super yellow, but I used regular free-range omega 3 eggs for the filling. The flavor was good, though. I'm going to get a better vanilla bean at Whole Foods... the one from Fresh Market was tiny and bent and really, really hard to get into.

    Yeah, it is more of a custard because of the addition of the egg. It's pretty similar to a recipe I used last year for my Christmas trifle.

    I'm sure it's age, but exacerbated by my use of a CPAP. Danged sleep apnea. Good news is that when I couldn't wear the cpap due to congestion, my wife said that I didn't snore. Maybe losing the weight will allow me to quit using it altogether.
     
  7. Cayvmann, I have dry eyes also. Which makes them tear excessively. Sort of illogical, isn't it? Your body no longer produces one of the essential elements in tears so your body compensates by producing more tears. There are several types of eye drops available. For me, some work better than others. You will probably need to try some before you find one that works best. I've settled on Systane Balance, which isn't cheap. You can also put eye lubricant in before you go to bed. It's like petroleum jelly, just a little bit is all you need. Do not expect to be able to see worth a shit afterwards. It may help since you think using a CPAP is the culprit.

    There are days however when nothing works and I constantly wipe the tears from my eyes. I dread the dryness of winter. Coupled with forced air heat, ugh.

    I can recall my grandmother had a tissue tucked into the sleeve of her dress. She was always using it to dry her eyes.

    I'm too nice. At least his friends vowed to take me out one night to thank me since they weren't sober enough to go get him themselves.

    Ha! I know. I'm an idiot! I left a hot tub full of naked lesbians to go hang out with smelly boys. I'm not exactly straight, but my friend is very straight and wanted to go see boys, so we did. I shoulda stayed with all the titties.
